1. In a pan (with olive oil or coconut oil sautee mushrooms and peppers
2. Add garlic and your desired seasoning (I did freshly ground black pepper and a bit of Mrs Dash)
3. Let saute/cook for a few minutes
4. Add spinach and let cook down (a minute maybe a bit more
5. Set aside
Tip: There will be lots of moisture in the pan from the mixture. I lay the mixture on some paper towels to drain until I'm ready to use
