Easy Vegetable Quiche
My love for kitchen creations ranges from 1-10 on the difficulty scale. I love trying new things and I’m ok with learning by trial and try again. There is really something to be said for the type of creativity you get to tap into in the kitchen. Flavors, textures and the different aromas can sometimes leave me feeling so damn amazing I need to take few steps back and go DAAAAAYYUUUUMMMM! And that is before anyone else has tasted it. Yes, self praise and pride is a good thing!!
That said – there are days when you need a quick and easy creation. This quiche is your answer. Funny side story, this was supposed to be a tuna & smoked mussel quiche which I have never made but was going to try that day but believe it or not, I remembered those 2 ingredients when this one was already in the oven! To answer, yes I will be trying this one sometime in the near future.
I’ve made many versions of a quiche over the years and I always thought it’s about the cheese and how much cheese you put into it. I was famous for a 3 cheese recipe which made only once and served it up. People went a little nuts – mind you, so did I lol. It was that good. My favorite part of hosting a dinner or serving food is the empty dishes after. I love creating just as much as I love feeding people and if the dishes are empty when they leave, I take the bow. Granted, the lifestyle and fitness/competitive path I chose changed what I cook sometimes and to how often I get to entertain but it’s good. It’s actually a blessing because the circle got smaller and smaller over the last few years or rather, since I chose this lifestyle. There is a quote that goes something like “goals got bigger, circle got smaller”…..
Back to the food that fuels us! When I say easy quick I tell no lie and trust me, you don’t have to stick to my ingredients. Get creative with your veggie combos. Asparagus and zucchini goes well with feta cheese for example and if you feel you need a little more protein, the choices are endless – tuna, chicken, smoked salmon to name a few. I got 4 dinner servings out of this recipe but if it was a side I would have sliced up the quarters a bit more and I would say up to 16 servings if you wanted just bite sizes.
I served with a green salad and had a few pieces of roasted butternut and winter squash from earlier in the week that I added along with pumpkin seeds and voila! Dinner is served.

Easy Vegetable Quiche
Ingredients
- 2 Eggs
- 2 Egg Whites
- 1 cup Almond Milk
- 2 tbsp flour
- half cup sliced mushrooms
- half cup sliced bell peppers
- 2 cup baby spinach
- 2 tbsp crumbled feta cheese
- 2 tbsp shredded cheese
- 1 tsp crushed garlic
Instructions

1. In a pan (with olive oil or coconut oil sautee mushrooms and peppers 2. Add garlic and your desired seasoning (I did freshly ground black pepper and a bit of Mrs Dash) 3. Let saute/cook for a few minutes 4. Add spinach and let cook down (a minute maybe a bit more 5. Set aside Tip: There will be lots of moisture in the pan from the mixture. I lay the mixture on some paper towels to drain until I'm ready to use
Egg mixture

1. Beat eggs and egg whites till nice and fluffy 2. Add flour and mix in adding the almond milk as you go along 3. Stir in feta cheese and season as desired Tip: If you need salt go for it but the feta cheese provides that flavor. I did not add any additional seasoning to this mixture and did not need it
Mix and bake

1. Preheat oven to 350 F 2. Grease your dish 3. Lay veggie mixture on bottom 4. Pour egg mixture on top 5. Sprinkle with shredded cheese 6. I baked covered for 15 and then uncovered for another 10 Tip: Ovens vary so check the center with a fork to make sure it's cooked all the way through.
